Bio
Jessica Wang is a pastry chef, chocolate maker and entrepreneur, at the head of her own micro-business in France. A graduate of the intensive international pastry program at École Ferrandi, she honed her know-how through ten years of experience between Paris, New York and Seattle.
It was during the pandemic that she founded Hedonism, an innovative company based in Seattle, where she enjoyed remarkable success. There, she offers the very first savory dessert tasting menu, and also launches an online store for high-end chocolates, combining technique, creativity and a sense of detail.
Recently settled in France, Jessica discovered the south of the country for the first time during her residency at La Rocabella. She sees it as an opportunity to nourish her culinary universe with a new territory and to deepen her sweet and savory explorations. His ultimate dream: to participate in the Sirha Pastry World Cup, with an ever more inventive and demanding approach.
Residency project
On the occasion of the culinary residency at La Rocabella, Jessica Wang wants to explore a territory that is still not very well marked: that of savory pastries. With her international experience and her innovative practice, she imagines vegetable and savory desserts, inspired by Mediterranean ingredients, local herbs, fruity olive oils, citrus fruits and seasonal vegetables.
Its objective is to develop daring and refined recipes, playing on the balance between sweetness, bitterness, acidity and umami. She will take advantage of the residence to experiment with new textures, refine her cooking and integrate more fermentation techniques, in order to further push her approach around taste, plants and sustainability.
Jessica also wants to reflect on the artistic and sensory dimension of tasting, by designing plates as works in their own right: visual, surprising, evocative. She will share her creative process with the other chefs, in a logic of transmission and exchange.
For her, this residence represents a privileged moment of research, freedom and creation, in the heart of an inspiring landscape, and a key stage in her culinary journey.
